Potato wheels, dairy and gluten free

These were quite good. I was craving tater tots which I have none of those right now…but i had some baked potatoes left over from a meal the other night. I sliced them up,  melted two tablespoons of earth balance butter, in the bottom of the fry pan,  and placed the slices in the pan. When they were golden brown I flipped them and salt and peppered them. Waited for the other side to golden up then ate with ketchup. So good. They and a crunch and a good taste to them. Id imagine you could really use a bunch of your favorite spices with these. I think kids might even  like them too…just maybe;)
