You know, one of the hardest things about being gluten and dairy free is the absence of great cookie dough!…but this is not true! I think I have already posted about chocolate chip cookies gluten free mix that is so good..have I shared my recipe for chocolate chip cookies that is just to die for? AND it is dairy and gluten free!
Chocolate Chip Cookie Dough–Emily style
1 cup butter(I use earth balance–they make a soy free version too)
1 cup brown sugar
1 cup white granulated sugar(regular sugar;)
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 tsp salt
2 eggs(or use a substitute(I like the egg replacer pictured below)
3 cups flour-I use the flour mix I make from the book Cooking for Isaiah (you may need to add a touch more if the mixture is a bit too gooey..maybe like 1/2 cup)
as many or as little bit of chocolate chips as you like;) I like to use the mini ones from enjoy life..
Cook 350 bake for around 10 minutes or until just golden brown and not gooey;)
OKAY NOW … this is the really great part…substitute the egg replacer for the eggs..freeze and separate with parchment paper..and you can either bake later…or wait for it..eat it..YUM! I love to eat it as a quick treat. And I love to have it so that when I’m baking ‘regular’ for my family, then I can grab some and not feel left out of the yumminess! Just slice with a knife and cook as normal….and then you can feel normal too;) You really can eat and feel full and feel joy in eating still, even when you have to avoid things!!
